Chicken Cutlets

There is nothing like the taste of a good old fashioned fried chicken cutlet. You will need a package of Perdue thinly sliced chicken cutlets, 2 cups of bread crumbs, 3 eggs, some salt and pepper to taste and some cooking oil. To prepare the cutlets, remove the chicken from the package and place on a plate. Beat the three eggs in a bowl; make sure the eggs are thoroughly mixed. Place a cup of bread crumbs on a big plate and you can add salt and pepper, there are other spices you can add depending on how you like your chicken.

Then take each cutlet and dip the cutlet in the egg mixture, make sure to let the cutlet drip the access egg off. Then place the cutlet in the bread crumbs and make sure both sides of the cutlet are covered with the bread crumbs. Pour some cooking oil in the bottom of a frying pan and let the oil heat up. Do not use to much oil or the cutlets will be greasy. Use about ¼ cup for the bottom of the pan.

Place the cutlets in the frying pan. Fry the cutlets until they are golden brown. Then on a plate, cover with paper towels so the access grease can fall off the cutlets. So all you have is a nice golden brown cutlet. You can season to taste.

These chicken cutlets go great with a side of fluffy white rice and some golden yellow corn. You can substitute the oil for lighter oil such as canola oil.
