| Stuffed Peppers Stuffed peppers are an old time favorite; they are great on a cold winter night. A nice plate of steaming hot peppers. You will need 4 peppers; you can use green or yellow, depending on taste. You will need a pound of chopped meat, about 2 cups of rice, 2 cups of shredded mozzarella, and 1 jar of tomato sauce. First you will need to cut the stem out of the peppers and take the seeds out. Make sure most of the seeds are removed before stuffing. Then boil the peppers in hot water until they are tender but not too soft. Then in a frying pan, brown the ground beef and drain the fat from the meat. Place in a bowl, then add the shredded cheese to the mixture, add tomato paste and then cook the rice and add it to the mixture. You don’t have to melt the cheese because it will melt when you bake it.
When the peppers are done, drain the peppers and make sure they are drained properly. Then in a baking dish, spread some tomato sauce in the bottom of the pan and place the peppers in the baking pan. Then taking your mixture, fill the peppers to the top, you can sprinkle more cheese and sauce on top if you like. Then bake at 350 degrees F for 20 minutes or until the hot. Then place on a plate and serve with a nice green salad. You can feed up to 6 people with the mixture. |
